TRENTINO ALTO ADIGE

Location: Mezzolombardo, Trento
Grapes: 100% Chardonnay
Vinification: The base wine ferments and ages in steel until next spring when the tirage takes place, which begins the period of rest on the lees which we extend up to at least 36 months
Alcohol content: 13,0° | DOC
Location: Mezzacorona - Trento
Grapes: 60 % Chardonnay, 40 % Pinot Nero
Vinification: A white wine, with part of the Chardonnay fermented in barriques.Aged on the lees for at least 60 months, followed by a further 3 months’ ageing in the bottle
Alcohol content: 12,5°

Piemonte

Location: Serralunga d’Alba (CN)
Grapes: 70% Pinot Noir, 30% Chardonnay
Vinification: Separate white vinification for the two wines, in temperature-controlled steel tanks. Aged on the lees for 30 months.
Alcohol content: 12,5° | DOCG
Location: Neviglie - Cuneo
Grapes: Pinot Noir and a solera-style reserve wine made from Chardonnay, Sauvignon Blanc, Viognier, Riesling and Chenin Blanc grapes
Vinification: Winemaking: White wine vinification and fermentation in oak for the Pinot Noir. The five white grape varieties are harvested and vinified together in stainless steel tanks, then added to the solera reserve wine, from which a portion is drawn off every November to produce the cuvée ready for secondary fermentation in the bottle. Aged on the lees for 30 months

Lombardia

Grapes: 100% Chardonnay
Vinification: Fermentation takes place partly in natural oak vats, partly in French oak barriques and partly in steel. It spends over 40 months on the lees, developing a pressure of 4.5 atm together with a creaminess typical of Satén

Vinification: The fermentation of the must takes place in natural oak vats. Following bottling in spring, it spends over 72 months on the lees

Grapes: Chardonnay 41%, Pinot Noir 35%, Meunier 24%
Vinification: Aged for 48 months on the lees
